Economy is currently disabled so you can't rent rooms to be exact, they simply squat in your designated tavern rooms.

Also, if you create a bedroom and set the zone of the bedroom to include the square you will have a door constructed on later, the door will be added to the value of the room once its made, and make the dwarf happier. Plus, if they have a door to their room I believe it also reduces noise, but I'm not 100% on this.

Once you've placed beds inside the barracks, is it necessary to turn those beds into dormitories or can you just leave them and they eventually get used? My current squads are set to use the barracks for everything, yet the dwarfs still have their individual bedrooms (located in another part of the fortress).
